Tacos with a twist! Savory & so delicious you won’t even notice you’re missing a taco shell!

TURKEY TACO LETTUCE WRAPS

INGREDIENTS

2 1/2 tablespoons of olive oil

1 lb. Plainville Farms ground turkey

Salt & pepper (to taste)

1 onion (chopped)

3 tablespoons of minced garlic

2 teaspoons of chili powder

1 1/2 cups of frozen corn

1 15.5-ounce can of black beans (drained and rinsed)

8 to 12 large lettuce leaves

Chopped cilantro, Pico de Gallo, crumbled queso fresco, and diced avocado, for topping (optional)

Lime wedges (for serving)

INSTRUCTIONS

Heat 2 tablespoons of olive oil in a skillet over medium-high heat.

Add the Plainville Farms ground turkey and season with salt and pepper.

Cook, breaking the meat into small pieces until cooked through (the internal temperature should reach at least 165 degrees F.) Transfer to a plate.

Add the olive oil, the red onion, and garlic to the skillet.

Reduce the heat to medium low and cook, stirring frequently, until tender (about 8 minutes.)

Add the chili powder, turkey and 1 cup water to the skillet and increase the heat to medium high.

Cook until most of the water is evaporated (about 4 to 5 minutes.)

Add the corn and beans and cook until heated through and no liquid remains.

Season with salt and pepper.

Pile the turkey filling into the lettuce leaves.

Top with cilantro, Pico de Gallo, queso fresco, and avocado.

Serve with lime wedges.
