If there’s one thing better than a Caesar salad – it’s a Caesar PASTA salad! This recipe is perfect for lunches any day!

TURKEY CAESAR PASTA SALAD

COOK TIME: 12 MINUTES

INGREDIENTS

12 oz. of your preferred pasta (penne, bowtie, etc.)

3 heads of romaine lettuce

2 cups of Plainville Farms turkey breasts (cubed)

1 cup of parmesan cheese (grated)

1 1/2 cups of plain yogurt

1 tablespoon of Dijon mustard

1 tablespoon of Worcestershire sauce

1 tablespoon of lemon juice

3 tablespoons of minced garlic

Salt & pepper (to taste)

Bacon (cooked & chopped)

Croutons (optional)

INSTRUCTIONS

Start by preparing the pasta – bring a large pot of water to a boil.

Once the water is boiling – add in the pasta & cook according to the packaging.

When the pasta is cooked – drain it & rinse it thoroughly with cold water.

Set the pasta aside to cool while you prepare the dressing.

In a blender – add the yogurt, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, 1/2 cup of parmesan cheese, and salt & pepper.

Blend until it’s smooth & creamy.

Chop the heads of romaine lettuce & add them to a large bowl.

Assemble the salad by adding the pasta into the bowl with the lettuce – along with the chopped turkey breasts, chopped bacon, and remaining parmesan cheese.

Pour the prepared dressing on top of the pasta salad mixture.

Toss to fully combine & serve immediately.

Top with croutons.
