In the air there is a feeling of holiday cheer!! (And the aroma of sweet potato casserole)

Sweet Potato Casserole

Ingredients

3 pounds of sweet potatoes, peeled and cut into cubes

3/4 cup brown sugar

1/2 cup butter

1/2 teaspoon vanilla extract

1 cup pecans

1/4 teaspoon cinnamon

salt and pepper for taste

2 cups miniature marshmallows

Instructions

1. Preheat the oven to 350°F. Grease a 9 x 13 pan.

2. Place sweet potatoes in a pot of boiling water. Simmer for 10-15 minutes or until fork tender. Drain.

3. In a large bowl, mash the sweet potatoes with brown sugar, butter, cinnamon, vanilla and salt & pepper.

4. Fold in half of the pecans and spread into the prepared pan.

5. Put marshmallows and remaining pecans on top.

6. Bake for about 30 mins or until marshmallows are golden brown.
