ROASTED TURKEY BREAST ROAST

COOK TIME: 2 HOURS + STANDING TIME

INGREDIENTS

1 Plainville Farms bone-in turkey breast lobe (5-6lbs)

5 teaspoons of lemon juice

1 tablespoon of olive oil

Salt & pepper (to taste)

1 teaspoon of rosemary (crushed)

1 teaspoon of thyme

2 teaspoons of garlic powder

1 onion (cut into wedges)

1 celery stalk (cut into small pieces)

1/2 cup of chicken broth

INSTRUCTIONS

Preheat the oven to 325 degrees F.

With your fingers – carefully loosen the skin from both sides of the turkey breast.

Combine the lemon juice and oil – brush this mixture underneath the skin.

In a bowl – mix together the pepper, rosemary, thyme, & garlic powder. Rub this mixture over the turkey breast thoroughly.

Place the onion & celery in a 3-qt baking dish.

Top with the turkey breast (skin side up.)

Pour the chicken broth into the dish.

Bake – uncovered – until the meat thermometer reads at least 165 degrees F (about 2 - 2 1/2 hours.)

If the turkey breast starts to brown too quickly for your liking – loosely cover with foil & continue cooking.

Once the turkey breast is finished cooking – remove from the oven & set aside.

Let cool for at least 15 minutes before carving.
