Smoked Turkey, Beet and Lentil Salad

This Smoked Turkey, Beet and Lentil Salad combines the earthy tones of beet and lentil with the smoky flavor of Plainville Farms® Turkey. Easy to prepare in advance, it's great for picnics.


3 tbsp. olive oil
3 tbsp. orange juice
2-½ tbsp. sherry vinegar
1 shallot, thinly sliced into strips
2 tsp. chopped orange zest
¼ tsp. salt
1/8 tsp. black pepper
3 cups cooked lentil beans
1 ¼ diced cooked beets
1/2 lb. diced Plainville Farms® Smoked Turkey (1/2-inch)
1/4 lb. diced Plainville Farms® Roasted Turkey (1/2-inch)
½ cup ripe olives
3 oz. watercress


In a large mixing bowl, whisk together olive oil, orange juice, sherry vinegar, shallots, orange zest, salt and pepper. Divide this vinaigrette into two large mixing bowls and set aside. Toss lentils, beets and orange segments with one bowl of the vinaigrette. Mix smoked turkey, ripe olives and watercress in remaining bowl. To serve, divide the lentil mixture among the serving plates. Top each with ½ cup of smoked turkey mixture. Serves 6.
