Hot Artichoke and Roasted Red Pepper Turkey Sandwiches

These Hot Artichoke and Roasted Red Pepper Turkey Sandwiches combine the creamy flavor of artichoke with the sweetness of red pepper. An uncommonly delicious lunch any day of the week!


1 leek, diced
2 (6.5 oz.) jars marinated artichoke hearts, drained and chopped
1 (16 oz.) jar roasted red pepper strips, drained and chopped
3/4 cup freshly grated Parmesan cheese
3 tbsp. mayonnaise
2 tbsp. butter
8 oz. Plainville Farms® Roasted Turkey Breast
8 oz. Plainville Farms® Hickory Smoked Turkey Breast
4 hoagie rolls


Preheat oven to 400°. Melt butter in a saucepan over medium heat. Add diced leek and sauté until tender. Stir in the artichoke hearts, roasted red peppers, Parmesan cheese and mayonnaise. Once combined, set aside.

To assemble, split rolls and top with equal amounts of both kinds of turkey breast. Spread artichoke mixture liberally. Place on baking sheet and bake for 10-15 minutes or until hot and bubbling. Serves 4.
