Caramelized Onion Thanksgiving Quinoa
This savory yet slightly sweet Caramelized Onion Thanksgiving Quinoa make an uncommonly delicious side dish at Thanksgiving. You can also enjoy it year round with our natural* turkey burgers or any favorite main.
1 tbsp. olive oil
2 cups diced red onion
2 tsp. chopped sage
1 cup Village Harvest Quinoa
1 3/4 cups low sodium chicken broth
1/4 cup toasted almonds
1 tbsp. chopped chives
salt and pepper to taste
Heat oil in a medium sized pot. Stir in onions and sage and cook over medium-low heat for 10 minutes, stirring occasionally. Pour in quinoa and chicken broth and bring to a boil. Turn heat down to low and simmer for approximately 25 minutes or until all liquid is evaporated. Mix in almonds and chives and season with salt and pepper to taste. Serves 6.
