Apple Turkey Pita Pockets

These Apple Turkey Pita Pockets are a creative way to use your Thanksgiving leftovers.


2 cups cooked Plainville Farms® Turkey Breast, cut into 1/2-inch cubes
2 red tart and juicy apples, cored & chopped
1/2 cup celery, chopped
1 can (8 oz.) crushed pineapple, drained well
1/3 cup lemon yogurt
1/4 cup non-fat mayonnaise
1/2 tsp. Dijon-style mustard
1/4 tsp. celery seeds, crushed
4 5-inch pitas, tops cut
4 lettuce leaves


In a medium bowl, combine turkey, apples, celery and pineapple.

In a small bowl, combine yogurt, mayonnaise, mustard and celery seeds. Fold dressings into turkey mixture.

To serve, line each pita with lettuce leaf and spoon 1 cup turkey mixture into each pita. Serves 4.
