This casserole is living its healthiest life!

BRUSSEL SPROUT, YAM & TURKEY RICE CASSEROLE

PREP TIME: 25 MINUTES

INGREDIENTS

2 cups of your preferred rice

2 tablespoons of olive oil

1 pound of brussels sprouts (trimmed & cut in half)

2 yams (diced)

Salt & pepper (to taste)

1 pack of Plainville farms tenderloins (diced)

3 tablespoons of minced garlic

2 onions (diced)

1 teaspoon of poultry seasoning

2 tablespoons of flour

2 ½ cups of chicken broth

¼ cup of parsley – chopped (optional)

INSRTUCTIONS

Prepare rice according to packaging instructions.

In the meantime – in a skillet, place a tablespoon of olive oil & brussels sprouts (cut-side down), and yams - cook for about 5 minutes or until golden brown.

Season with salt and pepper (to taste) and continue to sauté for 2 minutes. Transfer to a plate when finished.

In the same skillet add a tablespoon of oil and cook your Plainville Farms tenderloins for about 8 minutes (or until the temperature reaches at least 165 degrees F.)

Add garlic, onion, and poultry seasoning – sauté for 3 minutes & then whisk in the flour until absorbed.

Bring to a boil & simmer for 3 minutes.

Mix in your cooked rice, brussels sprouts, and yams. Garnish with parsley (if desired.)

Serve and enjoy!
