Tart Apple Cranberry Sauce
Ingredients1 tsp. olive oil
1 Granny Smith apple, peeled and chopped
1 package (12 oz.) fresh cranberries
1/2 cup apple juice
1/2 cup sugar
1 tsp. chopped thyme
1/2 tsp. salt
1/2 tsp. black pepper
InstructionsIn a medium saucepan, heat olive oil over medium-high heat and sauté apples for 3-5 minutes until tender.
Add cranberries, apple juice and sugar. Bring to a boil. Reduce heat to medium-low and stir in thyme, salt and pepper. Simmer 20 to 25 minutes or until mixture is very thick, stirring frequently.
Cool, cover and refrigerate until served. Serves 8.
