Maple Roasted Vegetable Medley
Ingredients1 lb. sweet potatoes, sliced into 1/2-inch rounds
2-½ cups cauliflower florets (about 1 head)
9 oz. Brussel sprouts, halved (about 2 cups)
2 tbsp. butter
1/4 tsp. salt
1/8 tsp. ground black pepper
2 tbsp. maple syrup
InstructionsPreheat over to 400°F. On rimmed baking pan, evenly scatter sweet potatoes, cauliflower and Brussel sprouts.
In small microwavable bowl, microwave butter, maple syrup, salt and pepper until melted. Pour over vegetables, stir.
Cook in oven until tender, about 40 minutes, stirring halfway through. Serves 6.
