Grilled Turkey, Beet and Kale Salad
Ingredients8 cups shredded kale
2 cups shredded grilled Plainville Farms® Turkey Breast
1 cup diced, roasted beets
1 cup sliced apricots
4oz. crumble goat cheese
1/4 tbsp. sliced almonds
Honey Balsamic Dressing (recipe below) and salt to taste
InstructionsCombine kale, turkey, beets, apricots, goat cheese and almonds in a large mixing bowl. Dress to taste with Honey Balsamic Dressing and salt.
Honey Balsamic Dressing
3/4 cup olive oil
1/4 cup balsamic vinegar
1 tbsp. honey
1/4 cup minced red onion
1/4 tsp. coarsely ground black pepper
Combine ingredients in a mason jar and shake. Makes approximately 1 cup and can be refrigerated for future use.
